Monday's Recipe


Happy Monday! Here is your recipe of the week. It is kid friendly and healthy.

The Best Nuggets Ever

3-4 boneless chicken breasts (depending on how many you are feeding)
2 eggs
1 1/2 c. of Japenese Panko Bread crumbs
1/3 c. of ground flax seed (I use Bob's Red Mill)
1/3 c. of grated parmesan cheese
1 t. salt
olive oil
2T. real butter


Cut up your chicken into bite size pieces. Beat 2 eggs in a bowl. Mix the dry ingredients in another bowl.

In a large skillet heat olive oil (2-3T.) and melt butter.

Dredge the chicken in the egg and then coat it with the dry ingredients. Pan fry the breaded pieces.

Serve with Secret Sauce - my husbands recipe!

Secret Sauce

2T. ketchup
1 1/2 T. mustard
2 1/2 T. mayo
4 drops of Worchestire Sauce

Mix together and you have a great dipping sauce!

that looks delish, right down to the special sauce. now, tell me more about Japenese breadcrumbs?????

Panko breadcrumbs are lighter than usual breadcrumbs. They are the kind that are usually used in fried shrimp. I like the Harris Teeter HT Traders brand and I like another brand called Ian's which is whole wheat. The consistency is a little different in these two so sometimes I mix the two or just use one or the other. In this picutre I used mostly the HT ones and just a little of the Ian's I had left.

They should be in the asian section of the grocery store.
