Monday's Recipe

I'm in a Mexican Mood. I'm drug out my ever faithful 3 ring binder and dug this one out. I have not made it in a while and it is SUPER easy...Smothered Enchiladas

You may use either ground beef, ground turkey, chicken. I'll give you the ground beef recipe, but should you choose chicken, just boil 2-3 chicken breasts for 10-15 min and then shred the chicken and substitute it for the ground beef.

1.5 lbs of ground beef

1 package of taco mix

1 small can of chopped green chilies, divided

2 cans of cream of chicken soup

1 (16 ounce) sour cream

8 8-in flour tortillas

2 c. shredded cheddar cheese

Brown groud beef in large skillet, drain. Stir in taco seasoning and 1/2 of green chilies. Set aside.

Stir together remaining chilies, soup and sour cream. Pour 1/2 of mixture into a lightly greased 13 x 9 baking dish.

Spoon beef mixture evenly down centers of tortillas'roll up. Place, seam sides down, over soup mixture in baking dish; top evenly with remaining soup mixture and cheese.

Bake at 350 for 25 minutes.

Garnish with salsa, lettece, beans, black olives...whatever floats your boat!

I must be liking some Mexican...I just realized that last Monday I gave you Southwestern Soup...I promise next Monday we will go in a whole different direction!
