Requested Recipes!

I had a little fall party friday night with some delicious food and fabulous friends! Thanks girls for our night. I enjoyed having you in my home so much!! I am posted my recipes from that night for you all and anyone else who might like.

The most requested recipe of the night was for the Pumpkin Dessert. Now I'm wishing I took pictures of the food table and all the beauty surrounding it! I just don't think of these things!

Pumpkin Dessert

1 15 oz. can solid pack pumpkin
1 12 oz. can evaporated milk
3 eggs
1 c. sugar
4 tsp. pumpkin pie spice
1 box of yellow cake mix
3/4 c. melted butter (1 1/2 sticks)
1 c. of chopped pecans

Combine the first 5 ingredients.
Transfer the batter to a 13x9 pan
Sprinkle with the dry cake mix, drizzle with butter and top with nuts.
Bake at 350 for an hour.

Taco Cheesecake

1 c. crushed tortilla chips
1 T. melted butter
1 lb. ground beef
1 envelope of taco seasoning, divided
2 T. water
2 8 oz pack. of cream cheese
2 large eggs
2c. shredded cheddar cheese
1 8 oz. sour cream
2 T. flour

Stir together crushed chip and butter; press into bottom of a 9 inch springform pan. Bake at 325 for 10 min.

Cook beef in a large skillet. Drain, return to skillet and and all but 1 t. taco seasoning (reserve the 1 t.) and the water. Cook over med. heat for 5 min.

Beat cream cheese until fluffy, add eggs and 1 t. of taco seasoning, mix, and then add cheddar cheese until all is blended.

Spread cream cheese mixture evenly over the crust and 1 inch up sides of pan. Spoon in beef, Spread cream cheese mixture from around the sides of pan over beef mixture, forming a one inch border. Combine sour cream and flour, spread over cheesecake.

Bake at 325 for 25 min. Cool for 10 min. Run a knife around edges and release pan.

Brie En Croute - Baked Brie

1 sheet frozen puff pastry
1 T melted butter
1/2 c. walnuts
1/8 t. cinnamon
1 8 oz. wheel of Brie (get a steal at Costco for $5.99 a wheel!!!)
1/4 c. brown sugar
1 egg, beaten
crackers for serving

Defrost puff pastry for 20 min. and unfold

Melt the butter, add walnuts and saute for 5 min. Add cinnamon and stir. Place the walnut mixture on top of Brie and sprinkle with brown sugar. Wrap the Brie in the puff pastry. Brush beaten egg on Brie. Put on cookie sheet and bake for 20 min. until pastry is golden brown.
